
Jamaican Jerk Chicken

3 pounds skinless, boneless chicken thighs, cubed
1 cup Italian Dressing
1 tsp kosher salt
1 tsp garlic powder
2 tbsp Jamaican Jerk seasoning
½ cup sliced red peppers
½ cup sliced green peppers
½ cup sliced red onions
1 tbsp Evoo
½ cup Sweet Lorraine's BBQ Sauce
1 gallon storage bag
15 in cast iron skillet
Cut 3 pounds of chicken thighs into cubes and place in storage bag. Combine Italian Dressing, garlic powder, kosher salt and 1 tbsp Jerkseasoning and pour over chicken cubes. Mix thoroughly and allow chicken to marinate for 30 minutes to overnight. After chicken has been allowed to marinate Heat skillet on medium high and add Evoo to skillet. When oil is hot add chicken and stir fry until golden brown add remaining Jerk seasoning along with peppers and onions. Stir Fry until vegetables char slightly along with chicken, stir in BBQ Sauce until chicken, peppers and onions are coated. Cook for 10 minutes. Serves 8.
