Buffalo Fried Salmon Bites


3 pounds Salmon

1 tsp garlic powder

1 tsp old bay seasoning

1 egg, beaten

1 cup Franks Hot Sauce

2 cups Drakes Fry Breading

or House made breading

4 cups Rice Bran oil or Soybean oil

15 in-Cast Iron Skillet

1 gallon storage bag


Scale, clean and rinse Salmon then cut into 1 inch cubes. Place salmon into storage bag. Combine hot sauce, garlic powder, old bay and beaten egg, mix and pour over salmon in storage bag. Store in refrigerator and allow to marinate for 30 minutes to 24 hours.

Heat skillet with oil on medium high setting to 350 degrees. Meanwhile, dredge salmon in breading and fry until crispy and golden brown.
